First tip!
I’m living w/ an italian friend right now and he taught me a little cooking tip. he said that if you have tomatoes, in pretty much any state. fresh, or just to the point where you might throw them out or might chance it and even a little beyond that, all you have to do is chop them up and cook them in a fair amount of olive oil w a clover or 2 of garlic sliced up for about 10-15 min. break them down a bit. he used about 1/2 cup of olive oil for what looked like 2 tomatoes. then he simmered cod fillets in the tom and olive oil for about 10-15 min flipping it once. the other thing he said is that he doesn’t usually eat the garlic, it’s just there for the flavor. but i’m a huge garlic fan. plus in the summer it keeps the mosquitoes away!
